Production notes

Freshly harvested grapes are crushed and yeasted quickly using a tank foot prepared 6 days before the harvest in order to use indigenous yeasts. After alcoholic fermentation, the wine is cooled to 18°C for the malolactic process, then to 15°C to control the microorganisms. It is aged in stainless steel vats and amphora to smooth out the tannins. After 7 months of ageing, the wine is bottled before the summer heat. The wine is fined with pea proteins, then tightly filtered to ensure perfect stability.

Tasting notes

Purple colour, the nose is very fruity (cherry, morello cherry, blackcurrant) and a little buttery. In the mouth, the tannins are present with a nice freshness.
