Product notes
This cuvée comes from Gamay vines planted in 1967 and 1978. The yield is 40 to 45 hectoliters per hectare. SULFITE FREE.
Production notes
The grapes are harvested by hand, carefully sorted and placed in small baskets that are collected and transported to the cellar, where they are emptied one by one into stainless steel vats. The grape clusters remain intact, and fermentation occurs naturally within the grape itself, without added yeast and, most importantly, without sulfur. While sulfur is essential in winemaking for preservation, this wine is made without it, as well as without any other oenological additives.
Tasting notes
It is richer in color, depth, and complexity than a conventional Gamay, as the absence of sulfur allows all the natural yeasts in the grape to ferment and fully express themselves. It's a unique wine. Its aromas are dominated by black fruits: blackberries, blackcurrants, and dark and red cherries, as well as strawberries and raspberries. It should be enjoyed slightly chilled (11°C) within two years of harvest, though it also ages beautifully.
