About this winery

The story begins at Château Paul Mas in Conas hamlet, in the splendid town of Pézenas, the city of famous playwright Molière. The estates then expanded to Montagnac, with Nicole vineyard and Mas des Tannes. Jean-Claude Mas’s great-grandfather, Auguste Mas, bought the first family vineyard in 1892, when he aquired 9 ha (22 acres) of vines in the Mas de Bicq, near the village of St Pons de Mauschiens. In 1934, Raymond Mas brings the family vineyard to a surface of 15 ha in Domaine Montredon...

Production notes

Les Faïsses come from vineyards located on terraces with a south-south exposure dominating the Hérault valley between the villages of Montagnac and St Pons de Mauchiens in Languedoc. Because of this terraced structure, each vineyard is rather small: up to 0.8 hectares for the largest, and most of the work must be done by hand. These vineyards were planted with vines and olive trees by the Romans 2000 years ago. This tradition has persisted with some variations through the centuries according to the needs of the population during difficult times (11 and 12th century). These terraces were mainly used to grow vegetables. They offer very good conditions for cultivating the vine and bringing the grapes to their peak of maturity. After a thorough selection of grapes, we destem. The vinification is done separately for each type of grape. Fermentation for 4 days for Grenache and 5 for Syrah at a maximum temperature of 28°C. Traditional maceration: 14 days for Syrah and 15 days for Grenache. We only use stainless steel tanks and cement tanks under controlled temperature. Ageing: 80% of the wine is aged in American oak barrels (including 35% in new barrels) and 20% in 1-year French oak barrels for 10 months. Soil: gravel and stones with some “Villafranchian” soils, clay and limestone. Age of the vineyard: Syrah 25-35 years-old, Grenache 28-45 years old Pruning: Guyot simple Density of plantation: 4000 plants/ha Harvest: by hand Average yield: 21 hl/ha Elevation: 250 meters Climate: Mediterranean
