This a long story, the main character being the vine. The scenery is the village of Montpeyroux on the lower slopes of the Mont Baudile. Over centuries, generation after generation have cultivated the grapes. In 1989 Sylvain Fadat decide to take over the wineyards and to vinify his first harvest. In 1989, most of the 5 hectares of vines came from the place called "Aupilhac", on terraces planted mainly with the Carignan grape variety, facing south. Poor limestone pebble soils where Grenache and Cinsault express themselves. Fairly short vatting time of 10 to 15 days. No punching down (pigeage). Only one pumping over per day during fermentation. Aging between 12 and 18 months.
Fruity and refreshing. Good length and fullness on the palate with very silky tannins. Spicy finish which gives it great seduction. Pairs well with cold meats, white meats and grilled meats.
