This a long story, the main character being the vine. The scenery is the village of Montpeyroux on the lower slopes of the Mont Baudile. Over centuries, generation after generation have cultivated the grapes. In 1989 Sylvain Fadat decide to take over the wineyards and to vinify his first harvest. In 1989, most of the 5 hectares of vines came from the place called "Aupilhac", on terraces planted mainly with the Carignan grape variety, facing south. It is therefore quite natural that the Domaine is named like this. Gradually, the cellar was enlarged, and the vineyard developed over two distinct terroirs. The vines are located on the first foothills of Larzac, in Languedoc, in the geographical era Terrasses du Larzac, Montpeyroux denomination. The terraces of Aupilhac: on which the Carignan and Mourvèdre ripen well and make strong and complex wines. The pure Carignan wine along with the blend made mainly of Mourvèdre are representative of the first wines of Aupilhac. The Cocalières amphitheater, situated at 350 m exposed North-North-West on the other side of the Aupilhac hill where white grape and Syrah are the main varietals with a slower maturity which make elegant and mineral wines. Sylvain, his wife Désirée and a motivated team operate the 27 hectares of vines, olive and truffle trees.
