Production notes

From Espelt vineyards located in the D.O. Empordà. Weathered granite soil. Cold pellicular maceration for 6 hours. Pressed at low temperatures, resulting in low yields. Static racking for 72 hours. The fermentation is done with natural yeasts, producing up to 100 grams of sugar per litre and fortified up to 15% alcohol by volume. The wine is aged in stainless steel tanks.

Tasting notes
