Product notes
Caiño grape is known for its scarce production, being the least productive of the white Galician varieties. The last to be harvested in the season, it is a very delicate grape, sensitive to mildew requiring interventions such as defoliation or green pruning. The decisive oenological virtues that make Caiño a unique variety are its ability to extract the maximum of the characteristics of the terroir and its exceptional ageing capacity.
Production notes
Because of its thicker skin, the Caiño grape undergoes a longer cold maceration process to extract the aromas. After the alcoholic fermentation, wine stays in its fine lees for more than 2 months. It is then allowed to rest at low temperature for at least another 6 months until it goes into bottle where it rests and rounds out for a further period.
Tasting notes
Intense and authentic saline character, highlighted by iodine and seaweed aromas. Clean aromas of ripe tropical fruits emerge, led by pineapple and mango, with a fresh background of lychee and cantaloupe melon. On the palate it displays remarkable flavour intensity and confidence, offering surprising volume and filling the mouth with richness. Its high extract gives it a savoury, juicy, and broad palate, while its excellent texture and balanced acidity keep it fresh and elegant.
