About this winery

The story begins at Château Paul Mas in Conas hamlet, in the splendid town of Pézenas, the city of famous playwright Molière. The estates then expanded to Montagnac, with Nicole vineyard and Mas des Tannes. Jean-Claude Mas’s great-grandfather, Auguste Mas, bought the first family vineyard in 1892, when he aquired 9 ha (22 acres) of vines in the Mas de Bicq, near the village of St Pons de Mauschiens. In 1934, Raymond Mas brings the family vineyard to a surface of 15 ha in Domaine Montredon...

Product notes

Food and wine pairing: best served at 10/12°C, with seafood and fish, curry dishes, white meats, blue cheese, or any fruit desserts. It will also be great on its own, as an aperitif.

Production notes

De-stemming, skin maceration for 4 hours from the grapes of our oldest vines, settling at low temperature at 10°C. Fermentation lasts 4 weeks, at controlled temperature (18°C max). Malolactic fermentation for 20% of the wine. 15% of Viognier finishes its fermentation in new oak barrels. Ageing: 3 months of oak aging for 15% of the wine. Terroir: clay-limestone Vineyard: 15-25-years old Pruning: Cordon de Royat Density of plantation: 4400 plants/hectare Harvest: Mechanical at night Average yield: 52hl/ha Altitude: 80-120 meters Climate: Mediterranean

Tasting notes

Colour: golden yellow, bright color, with green undertones. Nose: rich and elegant, with a quintessence of dried fruits, peach, white flowers, and a touch of vanilla and honey. Palate: ample and fresh, smooth, and thirst-quenching, with a long finish and subtle persistent toasted notes.
