Started in 2005 by 9 friends from a remote village on the west coast of Denmark, Stauning Whisky – taking its name from the village - is a new Nordic whisky created from passion, curiosity and the will to experiment and create. The vision was a 100% Danish whisky, one which reflected the place. The friends started to produce whisky the way they wanted using locally grown rye and barley, floor-malting and small fire-heated pot stills. A new modern distillery was built in 2018 but the Stauning way of small pot stills (now 24), open floor malting and direct fire heating has been maintained. Local peat, and from time-to-time local heather, is used to malt grains. Stauning’s peat smoke is unique providing a gentle mix of earthiness, cacao with a dried floral edge and sweet back note. A long, four-day fermentation develops deeper flavours to the spirit before laying in oak. The whiskies are matured relatively short to preserve the fruit-forward character of whiskies and only virgin and first fill casks are used.
