The story begins at Château Paul Mas in Conas hamlet, in the splendid town of Pézenas, the city of famous playwright Molière. The estates then expanded to Montagnac, with Nicole vineyard and Mas des Tannes. Jean-Claude Mas’s great-grandfather, Auguste Mas, bought the first family vineyard in 1892, when he aquired 9 ha (22 acres) of vines in the Mas de Bicq, near the village of St Pons de Mauschiens. Product notes
Clos des Mûres, emblematic wine of Domaines Paul Mas, owes its name to the brambles that surrounded this small plot from which this famous vintage was born in 2000. Since then, the success of this wine has required an extension of its production area outside the original enclosure.
Production notes
Destemming and separate winemaking for each grape. Fermentation at controlled temperature (26-28°C max) for 8 to 10 days with selected yeasts. Post-fermentation maceration for 2 to 3 weeks. 20% of the wine undergoes malolactic fermentation in barrel. The remaining 80% are put into barrels after malolactic fermentation. Ageing in French and American oak barrels for 9 months. 30 % of new oak barrels, 35 % of 1-year old oak barrels, 35 % of 2 years old oak barrels.
Tasting notes
Deep red purple colour, with amethyst hints. Complex and intense nose with an explosion of different notes as blackberry, cumin, dried thyme, dark chocolate, and tobacco leaves. Full-bodied and well-balanced palate. Fruity, silky, dense, fleshy wine with well-marked fruit aromas, fresh notes, apples, cedar, and a mineral finish nuanced by crisp tannins.
