Product notes
At Domaine de la Charmoise, Sauvignon Blanc covers 22 hectares. The vines, produced through massal selection, were mostly planted between 1967 and 1982. Average yields are 30 to 40 hectoliters per hectare. The soil is of the "perruche" type, meaning it consists of flinty clay with varying amounts of sand or gravel. The Domaine is situated at the highest point between the Loire River to the north and the Cher River to the south.
Production notes
Most of the harvest is done by hand, in small baskets, with sorting. The winemaking process varies each year depending on the vintage, the ripeness, and the acidity of the grapes. This Sauvignon Blanc is often made using skin contact maceration. Indeed, once picked, the grapes are destemmed and placed in vats for approximately 18 hours before being pressed. The juice is then transferred to vats to ferment slowly at a temperature of 15°C.
Tasting notes
This type of winemaking gives the wine a broader dimension. Indeed, the range of aromas is much greater; the wine offers a delicately smoky and fruity nose, where one notes white flowers, lemon, pineapple, grapefruit, and a little blackcurrant, but above all without any vegetal nuance, which is often characteristic of this grape variety.
