About this winery

The story begins at Château Paul Mas in Conas hamlet, in the splendid town of Pézenas, the city of famous playwright Molière. The estates then expanded to Montagnac, with Nicole vineyard and Mas des Tannes. Jean-Claude Mas’s great-grandfather, Auguste Mas, bought the first family vineyard in 1892, when he aquired 9 ha (22 acres) of vines in the Mas de Bicq, near the village of St Pons de Mauschiens. In 1934, Raymond Mas brings the family vineyard to a surface of 15 ha in Domaine Montredon...

Production notes

Destemming and separate winemaking for each grape. Fermentation at controlled temperature (26-28°C max) for 8 to 10 days with selected yeasts. Post-fermentation maceration for 2 to 3 weeks. 20% of the wine undergoes malolactic fermentation in barrel. 80% are put into barrels after malolactic fermentation. Ageing in French and American oak barrels for 9 months. 30 % of new oak barrels, 35 % of 1-year old oak barrels, 35 % of 2 years old oak barrels.

Tasting notes

Clos des Mûres, emblematic wine from Domaines Paul Mas, owes its name to the brambles which surrounded this small plot from which this wine was born in 2000. Deep red purple colour. Complex and intense aromas such as blackberry, cumin, thyme, dark chocolate, and tobacco leaves. Full-bodied palate, well-balanced and fruity wine with fresh notes of apples, cedar and a mineral finish nuanced by crisp tannins.
