Production notes
Clay and limestone, gravelly soil. Age of the vineyard: 25-year-old vines. Each grape variety is vinified separately. Destemming, direct pressing (pneumatic). Fermentation for 3 weeks at 16°C (maximum) with selected yeasts. At the end of fermentation, we rack the wine to keep only the fine lees and preserve as much of the fruity aromas as possible. Ageing on fine lees with regular stirring for 40 days in cement vats.
Tasting notes
