Product notes

Acquired by Marchesi Mazzei in 2006, Ipsus is born from the perfect combination of a land ideal for growing Sangiovese vines and the passion of a family dedicated to the art of winemaking. Within Il Ca¬ggio’s 150 hectares, there is the 6,5 hectares of the heavenly “clos”. The potential of the terroir is maximised by extremely precise vinification methods, with different clones or vineyard plots being vinified separately. Il Cagg¬io is situated between 310-361 metres above sea level. The soil is mainly claying schist mixed with calcareous marl and alberese rock fragments. The vineyards have a 150° exposure South-East South-West, with a Mediterranean microclimate. www.ipsus.it

The 6 plots are separated into 16-18 micro-vinifications, fermented in a combination of stainless steel and large oak casks with around 20 days of skin contact. Initially, maturation took place in all-new 500 litres French oak for 24 months but that has changed to a mix of 500 litres and 1,500 litres barrels with less new oak and slightly less time in wood, finishing with 8 months in cement. For the 2018 vintage, cement has been exchanged for ceramic and a longer time in bottle to preserve more primary fruit. Ipsus is classified as Chianti Classico Gran Selezione DOCG. To qualify, the grapes must be from a single estate and the wine must be aged for 30 months before release.
