About this winery

This a long story, the main character being the vine. The scenery is the village of Montpeyroux on the lower slopes of the Mont Baudile. Over centuries, generation after generation have cultivated the grapes. In 1989 Sylvain Fadat decide to take over the wineyards and to vinify his first harvest. In 1989, most of the 5 hectares of vines came from the place called "Aupilhac", on terraces planted mainly with the Carignan grape variety, facing south. Production notes

Optimization of all controllable parameters for a great red wine. A high-altitude vineyard in the middle of ‘garrigue’, the terroir presents large thermal amplitudes night/day. Maceration with punching down. Aging for 18 months in casks and barrels.

Tasting notes

Altitude and exposure slow down the maturation of the grapes, so the wine maintains great freshness with aromas of red fruits, spices, ‘garrigue’ and truffle after 5 years of aging. Fruity and silky, long texture.
