Product notes

Sandy-clay soil and oceanic climate. 2025 vintage featured a wet spring followed by a hot, dry summer, ideal conditions for organic farming and optimal maturation of the Sauvignon. Late August rains helped rebalance sugar concentration and acidity levels, preserving the freshness of the vintage.

Production notes

Harvests were conducted at night to preserve the grapes’ aromatic freshness. After a gentle three-hour maceration, the must was pressed and transferred to barrels and Qvevri amphorae for fermentation. Aging on fine lees continued for 7 months, with daily bâtonnage stirring to add roundness and complexity. Blending occurred in early March, followed by bottling at the end of the month.

Tasting notes

The nose reveals a fine balance between fresh citrus aromas and subtle mineral notes. Woody hints remain discreet, preserving the fruit’s expression. On the palate, the length captivates with its elegance, supported by moderate acidity that brings freshness and harmony.
