About this winery
The story begins at Château Paul Mas in Conas hamlet, in the splendid town of Pézenas, the city of famous playwright Molière. The estates then expanded to Montagnac, with Nicole vineyard and Mas des Tannes. Jean-Claude Mas’s great-grandfather, Auguste Mas, bought the first family vineyard in 1892, when he aquired 9 ha (22 acres) of vines in the Mas de Bicq, near the village of St Pons de Mauschiens. In 1934, Raymond Mas brings the family vineyard to a surface of 15 ha in Domaine Montredon...

Product notes
The legend of Vinus, the Heron, started on the Hérault Riverbanks, at the foot of Château Paul Mas in Pézenas. The Vignes de Nicole cuvees are produced in Nicole, near Montagnac (81 ha). Clay and limestone soil and limestone with fossils. Age of the vineyard: 20 to 22 years old.
Production notes
Destemming, each grape is vinified separately Skin contact maceration, racking at low temperatures. Pneumatic pressing. Fermentation under controlled temperature (15-17°C) for 15 days. The first week of fermentation, the Chardonnay finishes its fermentation in new oak barrels. Then the Viognier and Chardonnay are aged 3 months in oak barrels. 50% French oak and 50% American oak. The Viognier is aged in stainless steel tanks only.
Tasting notes
Bright yellow gold colour with green tints. A quintessence of passion fruit aromas, white currants, pear, and brioche. Fresh and creamy palate, showing a nice balance.
